Salt Crusted, Twice Cooked Potatoes

This is one of my favorite potato recipes! My whole family loves them. My mom learned to make them from one of her friend's at supper club over 15 years ago...we have been making them ever since!
This is the magic seasoning. Jane's Krazy Mixed Up Salt. Go out & buy some of this stuff! It is just fabulous on the potatoes! I'm not sure of all the herbs & seasonings in it but I can tell you that there is coarse salt, pepper, garlic, & onion.
Use regular, baking potatoes, scrubbed clean & dried. Cook them until they are just starting to soften. I microwave them, but you can bake them in the oven if you would rather.
Peel the paper wrapper off the end of a stick of butter. This is going to be the glue that holds the seasoning on the potatoes! Make sure you use really cold butter for this.
While the potatoes are hot, rub the butter 'glue stick' all over the skin of the potato, then liberally season with Jane's Krazy Mixed Up Salt seasoning. Don't be afraid to use too much. And definitely reuse the plate so the finished potatoes to pick up any extra seasoning left on it!
Place on a hot grill & cook until the skin gets crispy. You want to make sure you rotate them often, to ensure that all sides get crisp. On our charcoal grill, we cook them about 20 minutes, usually 10 minutes on indirect then 10 direct heat. If you are using a gas grill, it'll probably take about 20 minutes on medium heat.
Serve with butter, sour cream & all your favorite baked potato toppings!

  2. Thanks! You can find Jane's Krazy Mixed Up Salt in the spice/seasoning aisle of just about any grocery store here. I bought it last time from Harris Teeter, I think it was $1.99. They also have a pepper blend & some others flavors too, the salt one is the only one that I've tried though. If you have trouble finding it, you can order off the internet too, here's the link:
