Pan Fried Gnocchi with Parmesan Cheese

Okay, the fact that I have 4 pictures of this incredibly simple dish should attest for how I feel about it. Yummmm gnocchi. So good & they only take a few minutes. Plus, doesn't gnocchi sound so much fancier than having mashed potatoes?!? Not that there is anything wrong with mashed potatoes- trust me, I love them too. But it's fun to switch up the sides every now & again!
Ingredients:
1- 1 lb pkg of Gnocchi (with Potato)
3 tbsp of Extra Virgin Olive Oil
3 tbsp Butter
1/4 cup Parmesan Cheese, freshly grated
salt & pepper

Directions:
Cook the gnocchi according to the package directions. (Like pasta, in boiling water until they float to the top.). While the gnocchi is cooking, in a 10" skillet over medium/ high heat, melt the butter & olive oil together. When the gnocchi float to the surface of the pan, strain out with a spider or slotted spoon & add directly to the hot butter & oil.
Lightly pan fry, being careful not to break the soft gnocchi. This only takes a couple of minutes, you don't want the gnocchi to get too hard, just lightly browned.
Drain the gnocchi with a slotted spoon & place on a platter. Add the parmesan cheese immediately so it will melt to the hot gnocchi. This will serve 4, side portions.
My favorite is to serve these with my Grilled Chicken Breasts with Balsamic Glaze.
