Grilled Tomatoes with Garlic & Parmesan Cheese

I don't know about you, but I am always looking for new sides to make. Especially when we are grilling! Next time you've got the grill fired up, try these!
Ingredients:
2 medium/ large Slicing Tomatoes
1/4 cup Extra Virgin Olive Oil
3 Garlic Cloves, chopped
1/4 cup freshly grated Parmesan Cheese
2 tbsp fresh chopped Parsley
Salt & Pepper

Directions:
Heat the extra virgin olive oil in a small skillet over med/ high heat. Add the chopped garlic cloves & lightly cook until golden (about 5 minutes). Turn off burner & set aside to cool.
Slice the tomatoes in half, horizontally. Brush the tops (cut side) with some of the garlic infused olive oil, taking care not to get any of the garlic in it. Place them on a hot grill, cut side down for about 4-5 minutes. Brush the bottoms with the garlic infused olive oil & flip over to grill the bottom. Spoon or pour the chopped garlic & olive oil into the tomatoes & continue to cook another 4-5 minutes.

Immediately sprinkle the Parmesan cheese over the tomatoes when you pull them off the grill so it melts. Then sprinkle with the chopped parsley.

  1. Can't wait to try these when our beefsteak tomato crop is ready in our garden, yum yum. If we lived closer I would share my veggies, I know you would do wonderful things with them.
