Grilled Chicken Breasts with White BBQ Sauce

This is a new favorite this summer! The vinegary sauce is also known as Alabama White BBQ Sauce and it is delicious on chicken! I bet it would taste great on pork too. The seasoning gives it a 'Ranch' like flavor with the vinegary bite of eastern NC style BBQ sauce. It's a wonderful combination of flavors & the perfect alternative to regular BBQ sauce. This is my version of the Neeley's original recipe for Grilled Chicken with Alabama White BBQ Sauce
Ingredients:
(for the sauce)
1/2 cup Mayonnaise
1/2 cup Apple Cider Vinegar
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
the juice from 1/2 Lemon
a few splashes of hot sauce (I prefer Frank's)
Salt & Pepper
1 tsp fresh chopped Parsley
Boneless, Skinless Chicken Breasts
Olive Oil
Salt & Pepper

Directions:
Mix all the ingredients, reserving the parsley, together with a whisk. Cover & refrigerate for at least 1 hour.
I grilled boneless, skinless chicken breasts, but you could use bone in chicken too, what ever you prefer. This makes enough sauce for about 4 pieces of chicken. I seasoned the chicken breasts with salt & pepper then drizzled it lightly with olive oil.
We grilled it over direct heat (medium/ high temp) for about 5-6 minutes per side. You will need to adjust according to your choice of meat. While the chicken is grilling, reserve some of the sauce for dipping (I reserve a little less than half). When your chicken is fully cooked, place on a platter then cover with tin foil. Let it rest for about 5 minutes. After it has rested, dip the entire chicken breast into the sauce & plate. Sprinkle the fresh parsley on top & serve with extra sauce for dipping.

We had a southern theme going this evening, I served fried okra & grilled tomatoes with garlic & parmesan.
