Grilled Chicken Breasts with Balsamic Glaze

About 10 years ago, my best friend & I went to Orlando, FL on a little Spring Break excursion. While dining at a restaurant one evening, we fell in love with this dish- particularly the Balsamic Glaze!! I've tried to recreate & make this sauce a thousand or more times over the past 10 years but I just couldn't get it right. The restaurant is no longer there so I can't get the recipe from them, even if they would share it! Finally, another friend introduced me to this store bought glaze, for which I will forever be grateful! Oh my gracious is it good. Add it to cooked chicken, drizzle over Caprese Salad, there are endless possibilities for this yummy stuff.
I love the flavor of the charcoal grilled chicken with the balsamic glaze but I've also made it just by roasting or sauteing the chicken & that is really good too. Light your charcoal chimney (or start your grill if using gas). Clean your chicken breasts & then pat them dry with a paper towel. Then season with salt & pepper & drizzled with a little olive oil.
Grill them over direct heat, until fully cooked. Remove from grill, place on a platter & cover with tin foil. Let them rest for 5-7 minutes so the juices stay in.
This is the yummy, yummy goodness called Balsamic Glaze. I bought this particular one at our local Harris Teeter grocery store, in the condiments aisle near the other vinegars. You can also find it at specialty stores like William Sanoma. (It is actually about the same price at our William Sanoma & our Harris Teeter.) I've even seen it at our Super Walmart...so that tells me you should be able to find it anywhere! It is a little pricey, considering it's such a small bottle. I think this one was $5.99. But you don't really use a lot of it at a time, and it is SOOOO worth it!
After the chicken has rested, drizzle the balsamic glaze over the chicken breasts & serve. Everyone is going to love this!
