Jalapeno Popper Dip

Doesn't look look dreamy? It is! I kept coming across a bunch of recipes for Jalapeno Popper Dips, while they looked delicious, some of them just didn't make sense to me. I think the whole idea is to make a deconstructed Jalapeno Popper, so why do so many of them have other peppers or chilies in them? I simplified & came up with my version- it is amazing! You can make it was spicy or not spicy depending on your palate. My 4 year old tried mine. While she didn't l-o-v-e it, it wasn't because of the heat, I believe it was her deep fear of all things green. ;)
 Ingredients:
5 whole Jalapeno Peppers
1 (8oz) Cream Cheese, softened to room temperature
1/2 cup Mozzarella Cheese
1/4 cup Parmesan Cheese
Salt & Pepper
(Topping)
1/2 cup Panko Bread Crumbs
1/4 cup Parmesan Cheese
Drizzle of Olive Oil

Directions:
Chop the Jalapeno Peppers.
 Slice the top of the peppers, then quarter them. If you want a lot of heat, leave some of the seeds & the white veins that hold the seeds. If you want to make the dish not spicy, cut them all out like this.
 Take your knife & slice down the inside cutting the white out. Discard all of the seeds & veins.
 Take care not to touch your eyes, mouth, etc while cutting the Jalapenos. And make sure you wash your hands well after you are finished!
 Roughly chop all the peppers.
 In a small skillet, saute the peppers in a little olive oil over medium/ low heat. Just for a few minutes, until they are soft.
 Add the softened cream cheese, jalapenos, mozzarella & parmesan cheese to a food processor.
 Process until smooth. Season with a little salt & Pepper & pulse to combine.
 Spread the creamy jalapeno mixture to a small a small casserole dish or oven proof bowl that has been sprayed with non stick cooking spray.
 In a separate bowl, combine the panko & the parmesan cheese. Pour evenly on top of the jalapeno mixture & drizzle with a little bit of olive oil.
 Bake for about 15 minutes, until the top is browned & cheese is bubbly.
 Oh my, this is gooooood stuff! Creamy, cheesy inside with crunchy coasting- just like a Jalapeno Popper!
 I served with toasted bagette slices & homemade tortilla chips.
