Oven Roasted Broccoli

Oh my gosh, this is the best broccoli that I have ever put in my mouth! The panko bread crumbs give it a slightly crunchy crust & the parmesan is the perfect final salty touch- a great way to dress up plain, old broccoli!! Ingredients:
1 lb fresh Broccoli, cut into bite size pieces
2 tblsp Olive Oil, plus 1 tsp
2-3 cloves of Garlic, minced
1/3 cup Panko Bread Crumbs
1/4 cup Freshly Grated Parmesan Cheese
Salt & Pepper

Directions:

Preheat oven to 425 degrees. Wash & cut your broccoli into bite size pieces. Place them in a large bowl with the minced garlic, drizzle with olive oil. Toss well to coat evenly. In an oven proof skillet (I used a 10") toast the panko bread crumbs over medium heat until lightly golden. Watch these carefully, it only take a couple of minutes to toast them.
Add the toasted bread crumbs to the broccoli. Toss & season with salt & pepper.
Pour the the broccoli mixture back into the skillet that you used to toast the bread crumbs.
Bake in an oven at 425 degrees for 10-20 minutes, or until desired tenderness. Top immediately with Parmesan Cheese & serve.

  2. I love this recipe! I make something very similar to it, but have never added the bread crumbs. I'll have to try that next time! Thanks for the idea :)

  3. Yum! I make a version of this too, but have never used the breadcrumbs. I bet they add a nice crunch.
