Miniature Meat Loaves

I don't know why Meat loaf gets such a bad rap. It's the ultimate comfort food! Tender meat dolloped with tangy sauce- seriously, whats not to love?!? Try making these individual little loaves to dress it up a bit. They are easy enough for any night of the week but cute enough to serve for company! There's just something extra special about getting your own little meat loaf- I love it! Ingredients:
(For the Loaves)
1- 1 1/2 lbs lean Ground Beef
1 cup Italian Seasoned Bread Crumbs
1/4 cup shredded Parmesan Cheese
1 small Yellow Onion, chopped
2 Garlic Cloves, minced
1 Egg
2-3 tbsp Sauce (see below)
Salt & Pepper

(For the Sauce)
3/4 cup Ketchup
1 tbsp Worcestershire Sauce

Directions:
Preheat the oven to 350 degrees. In a skillet, over medium/high heat saute the chopped onion with olive oil until tender. Add the garlic for the last 1-2 minutes. Set aside to cool. Combine the ketchup & Worcestershire, set aside. Add all the ingredients for the meat loaves (reserving all but 2-3 tbsp of the sauce) into a large bowl. Fold to combine, being careful not to over work it.
Mold the mixture into miniature loaves & place on a sheet pan. Using the back of a spoon, make an indention in the top of the loaves. (This is to hold sauce!)
Bake in an oven at 350 degrees for 30 minutes. Take out of the oven & put a spoon full of sauce in the center (where you made the indention). Return to the oven and bake for an additional 10-15 minutes.
Enjoy your miniature meat loaves! I sprinkled a little fresh, chopped Parsley on top.
I served them with a classic meatloaf companion, mashed potatoes & some sauteed baby spinach.
