Porch Crawlers

Now this is a fun cocktail that's perfect for a summer party! It's refreshingly light & best (in my opinion) served over ice.  I've also heard them called Summer Beers or Brews & Hillbilly Lemonade but I'll stick with the name Porch Crawlers for this simple explanation:  If you drink too many of them, at the end of the night you'll be crawling up the porch to get in your house!  The ingredients sound odd, but trust me they are tasty!  Maybe a little too tasty, beware- they are potent (hence the name)!  So if you're looking for a simple cocktail to get your party started, give these a try.  They will not disappoint!  
Ingredients:
2-3 cans of frozen Lemonade Concentrate
3 3/4 cups cold Vodka (or 2 1/2 lemonade cans full)
9 (12 oz) cans of cold Light Beer

Directions:
Combine 2 cans of the lemonade concentrate with the vodka (we used Smirnoff) & beer (we used Miller Lite).  Taste & add the remaining can of lemonade if desired.  Serve over ice.  Enjoy! 
I made it in this 5.5 Quart container & it just about filled it up.  Servings depend on your consumers!  ;)

Lemon Bacca Baci

I found this wonderful little cocktail when I was looking for something special for our Anniversary dinner. It is light, refreshing & delicious. It is the perfect cocktail for any Spring or Summer Soiree! Ingredients:
3 oz Sparkling Wine
1 oz Lemoncello
1 tsp fresh berries
Crushed ice (optional)


Directions:
Combine 4 oz of sparkling wine & 1 oz of lemoncello in a mixing glass. Then place a spoonful of crushed ice into the bottom of a champagne flute & top with the berries. Pour the sparkling lemoncello over the berries & ice.
Honestly, I don't measure anything. I put the berries in the bottom of the flute. Then I pour in 3 parts cold sparkling wine & 1 part cold lemoncello...who would want to water that down with ice anyways?
I made this again when my best friend came to visit over the 4th of July weekend. This time I added blue berries & raspberries to be festive!

Our 4th of July Weekend

We had fun, old fashioned weekend full of boating, grilling, picnicking, and fireworks. Of course, there was no shortage of good food around too! We grilled some wonderful NY Strip Steaks one evening. I made chicken salad & lots of yummy picnic food for fireworks on the 4th. And, the weekend just wouldn't have been complete with out grilling some hot dogs! Here is some of the food that we ate: (I will be posting recipes, but let me know if there is something specific that you want!)
Romaine Salad with Grape Tomatoes, Cucumber, toasted Pecans, Queso Fresco with homemade, Roasted Garlic Vinaigrette dressing.
Salt Crusted, Twice Cooked Potato
NY Strip Steaks with Montreal Steak Seasoning
Chicken Salad with Green Grapes & Pecans.

French Baguette slices with Garlic & Herb Cheese Spread.
Prosciutto & White Cheddar with Red Apple slices. If you haven't tried apple & cheddar together before, you have to do this. It's a simple appetizer to put out & it's delicious. When I make it at home, I use tooth picks to make little skewers of them.

Chips with french onion dip, green grapes, red apple slices, white & orange cheddar cheese, green & black olives, roasted tomato bruschetta, garlic & herb cheese spread, chicken salad & sliced baguette.
